Didn’t sift the flour. Crush banana in large bowl then add eggs and whisk a little, then add that to the rest. Ingredients should be reordered.

Making today with blueberries and none of my normal utensils

Success but zero structural integrity, berries very tasty. Used about 150g blueberries, some very large. Ran out of vanilla at like half a tsp, used baking powder not bicarb this time. Rose well very pleased. Very buttery. Fell apart when removed from the dish.

Doing now for a grad Christmas in July morning tea. Swapped vanilla out for 1 tbsp brandy, and added 2 tsp cinnamon, 1 tsp nutmeg, 0.5 tsp ginger and 0.25 tsp cardamom (plus a sprinkle extra). Taking the oven temperature to mean conventional, so doing 160 fan.

That was the tastiest banana bread I have ever made. and I did end up giving it an extra 10-15 min in the oven and no dryness issues.
