Cajun Chicken Pasta

From Claudia, who also does the same ingredients as whole chicken breasts with potatoes. Creamy sauce coats the pasta in a really fantastic way.

Ingredients

  • Farfalle pasta 500 grams
  • Garlic 4 cloves
  • Chicken breast 500 grams (2 whole)
  • seasoning

  • Brown sugar 4 tsp
  • Paprika (smoked) 3 tsp
  • Dried oregano 2 tsp
  • Garlic powder 1 tsp
  • Onion powder 1 tsp
  • Chilli flakes 0.25 tsp
  • Salt 1.5 tsp
  • Pepper 0.5 tsp
  • White wine a splash
  • Butter 3 tbsp
  • Chicken stock 0.5 cups
  • Sundried tomatoes (strips) 140 grams
  • Spinach 1 cup (generous)
  • Parmesan 0.5 cups
  • Double cream 1 cup

Steps

  1. Boil and salt water for pasta. Once chicken is going, add pasta to pot and cook.
  2. Finely chop garlic. Dice chicken into large pieces.
  3. Combine seasoning ingredients, reserve 1 tbsp then toss chicken in remaining seasoning.
  4. Heat sundried tomato oil in a pan on medium-high. Sear chicken in batches.
  5. Reduce heat to medium, deglaze pan with white wine. Add butter and garlic, fry 30 seconds.
  6. Add stock, sundried tomatoes and spinach to pan and reduce for 3 minutes. Shave parmesan.
  7. Add cream, parmesan and seasoning and combine, then add chicken. Fry 4 minutes until thickened.
  8. Toss through pasta and serve.
