Prawn Risotto

I love to make risotto. Used to buy pre-cooked prawns and stir in.

Ingredients

  • Prawns (frozen, raw) 500 grams
  • Brown onions 1 whole
  • Garlic 3 cloves
  • Arborio 2 cups
  • White wine 0.25 cups
  • Chicken stock 4 cups
  • Parsley a handful

Steps

  1. Thaw prawns in colander under running water.
  2. Warm stock in small pot.
  3. Dice onion reasonably finely, slice garlic thinly.
  4. Saute onions in medium pot for a few minutes.
  5. Add garlic and fry for a few more minutes.
  6. Add arborio, fry until rice is sticking.
  7. Add white wine, fry it off.
  8. Add stock bit by bit.
  9. In a separate pan on max heat, in oil and butter, batch fry the prawns. Eat some.
  10. Roughly chop parsley
  11. Cook until stock is absorbed and rice al dente, then stir in the prawns and parsley.
